Yap for iPhone: a voice dictation keyboard. Tap Start on the Yap keyboard, speak, and the text is typed into any app. Speech is recognized on the phone (NVIDIA Parakeet model, downloaded once in the app), so audio never leaves it. English and 24 European languages. iOS 17 or later. Please test dictating into Messages, Mail and Notes, and the first-run setup. Same Yap account as Mac, Windows and Android.
